As I said, the big blue thing at the top of the conveyor belt is just a large vacuum cleaner. It's job is to pull all the stems and leaves and such that aren't attached to heavy things like olives out of the mix. Those blades are moving pretty fast, but if I didn't slow it down you couldn't see a closeup of the pieces being sucked into it.
